The Review: Intense straw color, lovely perlage (that’s French for ‘the bubbles hang around for a long time’), highly aromatic with lots of peach, pear and green apple on the approach. Floral flipside, with a lemon-like finish. Rich and substantial, but not a drama queen. This one’s a great seafood wine, but again, don’t think you have to restrict yourself to seafood. It’s a team player.
